Duck in Port

  • 2 duck breast
  • 2 teaspoons black pepper, whole
  • 2 teaspoons butter
  • 1 shallot
  • 1 cup port wine
  • 4 teaspoons cognac
  • 1 cinnamon stick
  • 2 star anise pods
  • 4 teaspoons sugar

  • Remove excess fat from the duck breast and score the skin with a knife. (It is important to leave some fat as this is what will cook the duck).
  • Salt both sides of the breasts and add cracked pepper only on the skin side.
  • Sear in a pan on both sides slowly and remove the breasts and drain the fat.
  • Add the port, sugar, cinnamon, and anise and simmer.
  • Slice the breasts thinly.
