2 duck breast
2 teaspoons black pepper, whole
2 teaspoons butter
1 shallot
1 cup port wine
4 teaspoons cognac
1 cinnamon stick
2 star anise pods
4 teaspoons sugar

Remove excess fat from the duck breast and score the skin with a knife. (It is important to leave some fat as this is what will cook the duck).
Salt both sides of the breasts and add cracked pepper only on the skin side.
Sear in a pan on both sides slowly and remove the breasts and drain the fat.
Add the port, sugar, cinnamon, and anise and simmer.
Slice the breasts thinly.
