Easy Pink Mole

  • Heat a pot over medium heat, add the lard, and sauté the almonds, peanuts, pine nuts, and sesame seeds for a maximum of 5 minutes; it is important not to brown them too much. Set aside.
  • Heat a pot over medium heat with lard and sauté the onion, garlic, yellow habanero without seeds, güero chili without seeds, bread, plantain, cinnamon, anise, allspice, clove, and cranberry without browning. Set aside.
  • Place the beetroot with the skin on a baking tray and bake for 30 minutes at 200 °C. Remove the skin and set aside.
  • Blend the seeds, fried chiles, and roasted beetroot; add chicken broth and blend until the consistency is smooth.
  • Heat a pot over medium heat and add lard, fry the mole, and cook for 30 minutes on low heat, ensuring it does not stick.
  • Serve a mirror of mole on a plate, place pieces of chicken and drizzle with more mole. Garnish with pink pine nuts, rose petals, and fried plantain; accompany with tortillas and your favorite beverage.
