1 kilo black beans, washed
500 grams dried meat
2 tablespoons olive oil
250 grams pork loin, in 3 cm cubes
1 white onion, finely chopped
4 cloves garlic
1 serrano chile, cut in half
500 grams smoked ham, in pieces
500 grams Spanish chorizo, cut into pieces
500 grams pork ribs, separated
2 oranges
hot sauces
white rice, for garnish

Feijoada is started a day in advance. The beans are placed in a deep dish with cold water and left to soak in the refrigerator overnight.
In another deep container, soak the dried meat and let it soak overnight as well.
The next day, in a large pot, heat the oil over medium heat. Add the cubed pork, onion, garlic, and season with pepper. Cook for 5 minutes.
Add the ham, chorizo, ribs, and dried meat to the pot. Add the beans and enough water to cover all the ingredients.
Allow the mixture to boil, reduce to low heat, cover, and cook for 2 hours. Add more water during cooking if necessary.
With a spoon, mash approximately 1 cup of the beans for the consistency of the dish. Season the dish with salt and pepper.
Remove from heat and serve.
