Filet Mignon with Serrano Ham and Goat Cheese Crust

  • 4 filet mignon
  • 2 tablespoons Extra Special Olive Oil®
  • 1/2 onions, finely chopped 1/2 onions, finely chopped
  • 1/2 cups tomato purée 1/2 cups tomato purée
  • 1/4 cups sour cream 1/4 cups sour cream
  • 12 slices serrano ham
  • 200 grams Extra Special Goat Cheese®
  • 500 grams puff pastry
  • 1 egg, for glazing 1 egg, for glazing
  • 1 teaspoon Great Value® plain salt
  • 1/2 teaspoons pepper 1/2 teaspoons pepper
  • 1 sprig chervil, for decoration

  • Preheat the oven to 190ºC.
  • In a medium skillet, add the olive oil and onion, add the tomato puree, let cook for two minutes, add the cream, season with salt and pepper, and let cool.
  • Place the strips of serrano ham and place the filet on top, cover the filet with the strips of serrano ham until completely wrapped. Set aside.
  • Roll out the puff pastry to approximately 3 mm thick, add a little of the creamy tomato sauce, place the filet on top.
  • On top of the filet, add the pieces of goat cheese, cover the meat with the puff pastry until completely covered. Brush with egg.
  • Bake for 40 minutes and let rest for 10 minutes before serving. Serve with parsley. Buy HERE
