Filet Mignon with Sherry Sauce

The filet mignon turns out very well when cooked in a skillet. This recipe is very tasty as the sherry pairs very well with the filet mignon.

4 filet mignon, approx. 3cm wide
1/2 tablespoons pepper
1 bunch arugula
4 tablespoons butter
2 shallots, chopped
1/2 tablespoons salt
1/4 cups sherry

Arrange the arugula on 4 plates where you will serve the meat.
In a large skillet, melt the butter and cook the shallots, salt, and pepper over medium heat. Cook until slightly golden.
With paper towels, dry the filet mignon and add to the skillet, cooking for approximately 5 minutes on each side.
Place the steaks on the plates with salad.
Add the sherry to the skillet and cook until it boils, simmer for 1 minute, and pour the sauce over the steaks.
