Fried Quesadillas with Chicken Tinga and Guacamole

No one can resist quesadillas, and these tinga quesadillas will be no exception with their delicious flavor and crispy texture, accompanied by a spicy guacamole, it’s the ideal appetizer to pamper your family.

  • 2 cups corn masa flour
  • 1/4 cups wheat flour
  • 1/8 cups vegetable oil
  • 1/4 cups water
  • 1/4 teaspoons salt
  • 1 tablespoon REXAL® baking powder
  • 2 cups vegetable oil, for frying
  • 2 cups chicken tinga
  • 2 avocados, for the guacamole
  • 1/4 onions, for the guacamole
  • 1 clove garlic
  • 4 serrano chiles
  • 2 tablespoons lime juice
  • salt
  • lettuce, for serving

  • For the dough, in a bowl add the corn flour, wheat flour, oil, water, salt, Rexal® baking powder and knead until you obtain a homogeneous consistency. Let it rest for 10 minutes and set aside.
  • In a deep skillet, heat the oil over medium heat. Meanwhile, using a tortilla press, make a ball of dough and press to form a tortilla, add a little tinga, close and fry for 5 minutes. Drain on paper towels and set aside.
  • For the guacamole, blend the avocado with the onion, garlic, serrano chili, lime juice, and season with salt.
  • Serve the quesadillas on a bed of lettuce with the guacamole and enjoy.
