A rich glazed ham with citrus jam and spices baked for 2 and a half hours and accompanied by a delicious citrus sauce. An excellent dish for a Christmas dinner or an elegant dinner.
TO BAKE THE HAM: Preheat the oven to 180 degrees Celsius and position the oven rack in the lower third.
With a sharp knife remove excess fat from the pork leg. Place the pork with the fat side up and make diagonal cuts with a knife to create a diamond pattern across the fat layer.
Place the ham in a roasting dish. Add the orange juice and enough water to cover 0.5 cm of the dish. Bake for approximately 2 hours (15 minutes for every 2 kilos of ham). Add water every half hour to maintain the same water level in the dish.
While the ham is cooking, heat 1/4 cup of the jam in a pot over medium heat. Add the sugar, ginger, and cloves. Mix and remove from heat, this is the glaze.
TO GLAZE: Remove the ham from the oven and increase the temperature to 220 degrees Celsius.
Add more water to the baking dish to have 1 cm of water and with a pastry brush apply the jam glaze over the ham.
Return the ham to the oven and bake until the glaze is bubbling and begins to brown (10-15 minutes).
Remove the ham from the oven and place it on a large platter. Cover with aluminum foil and allow to cool for 20 minutes while you make the accompanying sauce.
TO MAKE THE SAUCE: Place the juices from the baking dish where you cooked the ham into a deep dish and allow to cool for 10 minutes for the fat to separate. Skim the fat off the juices with a spoon.
Place the juices in a pot and add the remaining 1/4 cup of jam and the lemon juice. Boil and season with salt and pepper.
Add the cornstarch and whisk the sauce for 15 minutes. Remove from heat and serve to accompany the ham.
