Glazed Turkey Breast with Cranberry Sauce

  • 2 tablespoons butter, for the glaze
  • 1/4 cups onion, finely chopped, for the glaze
  • 2 tablespoons garlic, finely chopped, for the glaze
  • 2 tablespoons ginger, finely chopped, for the glaze
  • 1/2 cups honey, for the glaze
  • 1/8 teaspoons clove powder, for the glaze
  • 1 star anise pod, for the glaze
  • 1 tablespoon nutmeg, for the glaze
  • 1 tablespoon rosemary, finely chopped, for the glaze
  • 3 cups Ocean Spray® Craisins® dried cranberries, for the glaze
  • 2 cups Ocean Spray® Cranberry Classic®, for the glaze
  • salt and pepper, for the glaze and the turkey breast

  • 2 tablespoons vegetable oil

  • Preheat the oven to 200° C.
  • For the Glaze, heat a small pot over medium heat with the butter, cook the onion and garlic, add the ginger, honey, soy sauce, star anise, nutmeg, rosemary, the 3 cups of Ocean Spray® Craisins® Dried Cranberries, and Ocean Spray® Cranberry Classic® juice, season to taste and cook until the cranberries soften. Cool and set aside. Chill slightly.
  • Blend the previous preparation until you obtain a smooth and shiny sauce. Set aside.
  • On a cutting board, tie the turkey breast with twine, season with salt and pepper.
  • Heat a skillet over medium heat with the oil and sear the breast on all sides, add the sauce and constantly baste. Remove from the skillet and place on a baking sheet, cover with the cranberry sauce, and bake for 30 minutes, basting constantly for a perfect glaze.
  • Remove the breast from the oven and slice into thin pieces. Serve on a plate and accompany with Christmas salad.
