These tequila-glazed wings have a mix of sweet and savory flavors that balance out to achieve a perfect combination. The smoky flavor of tequila combined with D’Gari® Maple Syrup makes a perfect match for this preparation.
1 kilo chicken wings, with skin, cleaned of feathers
3 tablespoons salt
1 tablespoon ground black pepper
2 tablespoons paprika, paprika
1/2 cups cornstarch
vegetable oil, for frying
dressing, ranch, to accompany
blue cheese, to accompany
potato wedges, to accompany
cucumber, and carrot, for the crudités, to accompany
green onion, pickled (including stems) with habanero, to accompany

For the mango habanero sauce, heat a skillet over medium heat, add the butter and cook the onion, garlic, habanero pepper, and mango for 2 minutes. Add the apple cider vinegar, orange juice, and D’Gari® Maple Syrup; cook for another 5 minutes until it reaches a semi-thick consistency; then add the mustard, allspice, and salt, mix well, remove from heat and blend, set aside.
For the tamarind sauce, heat a skillet over medium heat, add the butter and cook the onion, garlic, and chipotle pepper for 2 minutes. Add the tamarind concentrate, D’Gari® Maple Syrup, Worcestershire sauce, allspice, and salt; cook for another 5 minutes until it reaches a semi-thick consistency; then remove from heat and blend, set aside.
For the BBQ sauce, heat a skillet over medium heat, add the butter and cook the onion, garlic, and guajillo pepper for 2 minutes. Add the ketchup, D’Gari® Maple Syrup, Worcestershire sauce, apple cider vinegar, allspice, and salt; cook for another 5 minutes until it reaches a semi-thick consistency; then remove from heat and blend, set aside.
In a bowl, season the wings with salt, black pepper, and paprika, add the cornstarch and mix thoroughly.
Heat a deep pot with plenty of oil over medium heat and fry the wings for about 8 minutes; divide into three and coat with the 3 different sauces.
Serve the wings and accompany with ranch dressing topped with blue cheese, wedge potatoes, cucumber and carrot crudités, and pickled green onions with habanero.
