Green Curry of Beef or Chicken

Green curry is a variation of traditional yellow curry that is commonly eaten in Thailand. This recipe is very rich as it combines spices, herbs, and coconut milk.

  • 500 grams beef tenderloin, cut into thick cubes
  • 2 cloves garlic
  • 1 thai green chili, chopped
  • 1 onion, finely chopped
  • 1 cup fresh cilantro, chopped
  • 1/2 cups fresh parsley, chopped
  • 1 tablespoon olive oil
  • 1 lime juice
  • 1/2 tablespoons cumin powder
  • 1/4 tablespoons thyme
  • 1/4 tablespoons salt
  • 1 can coconut milk
  • 1 red bell pepper, julienned

  • Place garlic, cilantro, onion, chili, parsley, olive oil, lemon juice, cumin, thyme, and salt in a food processor. Process until a paste is formed.
  • Place the beef or chicken cubes and the bell pepper in a deep bowl with the green curry paste. Mix well, cover, and refrigerate for at least 30 minutes.
  • When ready to cook, heat a large skillet over medium heat.
  • Add the beef or chicken cubes and the bell pepper with the green curry to the skillet. Cook until the meat is well sealed.
  • Add the coconut milk and mix. Cook for 30 minutes over medium heat and serve.
