Green curry is a variation of traditional yellow curry that is commonly eaten in Thailand. This recipe is very rich as it combines spices, herbs, and coconut milk.
Place garlic, cilantro, onion, chili, parsley, olive oil, lemon juice, cumin, thyme, and salt in a food processor. Process until a paste is formed.
Place the beef or chicken cubes and the bell pepper in a deep bowl with the green curry paste. Mix well, cover, and refrigerate for at least 30 minutes.
When ready to cook, heat a large skillet over medium heat.
Add the beef or chicken cubes and the bell pepper with the green curry to the skillet. Cook until the meat is well sealed.
Add the coconut milk and mix. Cook for 30 minutes over medium heat and serve.
