Chicken Skewers with Pork Belly

  • 4 chicken breasts, boneless and skinless
  • 300 grams pork belly, or pork belly
  • 1 white onion
  • 2 red bell peppers
  • 1/2 cups Sriracha sauce
  • 2 tablespoons coarse salt
  • 1 tablespoon ground black pepper

  • Prepare your Weber® grill for medium indirect heat (350º - 450ºF or 175º - 232ºC). Soak the Weber® bamboo skewers in water for 30 minutes before grilling.
  • Pat the chicken breasts dry with a paper towel, cut into 2cm x 2cm cubes, and season with salt, pepper, and sriracha to taste. Let rest in the refrigerator for 30 minutes.
  • Cut the pork belly, onion, and bell peppers into cubes the same size as the chicken.
  • Assemble your skewers alternating onion, bell pepper, chicken, and pork belly. Repeat as necessary to fill the skewer.
  • Transfer the skewers to medium indirect heat for 15 minutes. To mark the skewers, place them over medium direct heat for 5 minutes on each side.
  • Remove the skewers from the grill and serve hot.
