Prepare your Weber® grill for medium indirect heat (350º - 450ºF or 175º - 232ºC). Soak the Weber® bamboo skewers in water for 30 minutes before grilling.
Pat the chicken breasts dry with a paper towel, cut into 2cm x 2cm cubes, and season with salt, pepper, and sriracha to taste. Let rest in the refrigerator for 30 minutes.
Cut the pork belly, onion, and bell peppers into cubes the same size as the chicken.
Assemble your skewers alternating onion, bell pepper, chicken, and pork belly. Repeat as necessary to fill the skewer.
Transfer the skewers to medium indirect heat for 15 minutes. To mark the skewers, place them over medium direct heat for 5 minutes on each side.
Remove the skewers from the grill and serve hot.
