  • 2 cloves garlic
  • 7 guajillo chiles, deveined and seedless
  • 1 cup butter, at room temperature
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 1 tablespoon salt
  • 1/2 tablespoons pepper
  • 1 chicken, with skin, cleaned and butterflied (1.5 kg)

  • Preheat the oven to 220 °C.
  • On a griddle, roast the garlic and guajillo chiles. Remove and blend until a fine powder is obtained.
  • In a bowl, mix the butter with the guajillo chili powder and garlic, onion powder, oregano, salt, and pepper.
  • Brush the chicken with the butter mixture all over, including between the skin and the meat. Place it on a baking tray and bake for 45 minutes.
  • Remove the chicken from the oven, brush again with butter and lower the oven temperature to 180 °C.
  • Bake again for another 15 minutes or until well cooked. Remove and serve, accompanied by a green salad.
