Put the onion, garlic, achiote, wine in the blender and blend. Mix with the juice and the other ingredients, marinate the guinea hens for at least 4 hours or overnight.
Remove the guinea hens, place them on a baking tray, and bake until golden brown.
Put the butter in a saucepan, add the flour and let it cook for a few minutes. Add the marinade and let it reduce to a not-too-thick sauce, season with salt.
Sauté the onion in olive oil, add vinegar, pepper, bay leaf, and oregano, and season with salt and pepper.
Serve the Guinea hens with the sauce underneath and the onion as a side dish. And for vegetables, some stuffed tender zucchinis.
