Guinea Hens in White Wine and Achiote

If there are few people at the Christmas dinner, these guinea hens will save the day, and their delicious flavor will delight you.

  • 4 Guinea hen, in half
  • 1/2 onions
  • 2 cloves garlic
  • 1 teaspoon black pepper
  • 1 teaspoon allspice berries
  • 100 grams achiote
  • 6 bitter oranges, extract the juice
  • 1/2 cups olive oil
  • 1 tablespoon oregano
  • 2 cups white wine
  • 50 grams butter
  • 2 tablespoons flour
  • 4 red onions, in feathers
  • 1 cup white vinegar
  • 1 leaf bay
  • salt, to taste

  • Put the onion, garlic, achiote, wine in the blender and blend. Mix with the juice and the other ingredients, marinate the guinea hens for at least 4 hours or overnight.
  • Remove the guinea hens, place them on a baking tray, and bake until golden brown.
  • Put the butter in a saucepan, add the flour and let it cook for a few minutes. Add the marinade and let it reduce to a not-too-thick sauce, season with salt.
  • Sauté the onion in olive oil, add vinegar, pepper, bay leaf, and oregano, and season with salt and pepper.
  • Serve the Guinea hens with the sauce underneath and the onion as a side dish. And for vegetables, some stuffed tender zucchinis.
