Ingredients: 4 Guinea hen, in half; 1/2 onions; 2 cloves garlic; 1 teaspoon black pepper; 1 teaspoon allspice berries; 100 grams achiote; 6 bitter oranges, extract the juice; 1/2 cups olive oil; 1 tablespoon oregano; 2 cups white wine; 50 grams butter; 2 tablespoons flour; 4 red onions, in feathers; 1 cup white vinegar; 1 leaf bay; salt, to taste

Put the onion, garlic, achiote, wine in the blender and blend. Mix with the juice and the other ingredients, marinate the guinea hens for at least 4 hours or overnight. Remove the guinea hens, place them on a baking tray, and bake until golden brown.
