Herb-Crusted Pork Loin

  • 8 garlic, roasted
  • 1 cup butter, at room temperature
  • 1 teaspoon salt
  • 5 tablespoons McCormick® gourmet organic provencal herbs
  • 5 tablespoons Romero McCormick® Gourmet Organic
  • 1/2 teaspoons McCormick® Gourmet organic ground pepper
  • 1 pork loin, 2 kilos
  • 2 cups new potatoes, cut in half
  • 2 cups sour cream, for the sauce
  • 1/2 cups evaporated milk, for the sauce
  • 3 tablespoons butter, for the sauce
  • 1 tablespoon lemon juice, for the sauce
  • 1/3 cups white wine, for the sauce
  • 1 teaspoon lemon zest, for the sauce
  • vegetables, steamed, for serving

  • In a bowl, mash the garlic with a spoon until you have a puree, add the butter, salt, McCormick® Gourmet Organic Herbs de Provence, McCormick® Gourmet Organic Rosemary, McCormick® Gourmet Organic Ground Pepper and mix until completely combined.
  • On a cutting board, tie the loin with cotton string. Place on a baking tray and brush the loin completely, then sprinkle with McCormick® Gourmet Organic Herbs de Provence and McCormick® Gourmet Organic Rosemary, cover with aluminum foil, and bake for 1 hour at 190°C.
  • Remove the aluminum foil, add the potatoes and bake for another 30 minutes at 190°C.
  • For the sauce, in a small pot heat the cream, evaporated milk, butter, lemon juice, white wine, lemon zest, season with salt and McCormick® Gourmet Organic Ground Pepper. Cook for 10 minutes. Set aside.
  • On a cutting board, slice the loin, serve on a plate with sauce and accompanied by vegetables.
