Season the ribs with salt and pepper on both sides.
In a large pot that can also be covered and then placed in the oven, heat the vegetable oil and brown the ribs to seal them completely. Remove the ribs from the pot.
Add a little more oil and now sauté the ginger, onions, and garlic for 3-4 minutes.
Return the ribs to the pot and add the beer and rice vinegar (make sure to completely cover the ribs). Cover the pot and cook on low heat for 2 1/2 hours.
Preheat the oven to 150 degrees Celsius.
Pour the hoisin sauce over the ribs, and place the pot without the lid in the oven for 30 minutes. Remove from the oven.
Remove the ribs from the pot and place them on a serving platter.
To finish the sauce, skim off the fat from the top with a spoon and strain. Pour over the ribs and serve.
