  • 1/4 cups olive oil
  • 2 tablespoons parsley, finely chopped
  • 1 tablespoon rosemary, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 tablespoons shallot, finely chopped

  • 1 rack of lamb, 8 chops, approximately
  • 1 cup balsamic vinegar, for the reduction
  • 5 tablespoons artificial sweetener, for the reduction
  • 1 teaspoon garlic, finely chopped, for the reduction
  • 3 sprigs rosemary, for the reduction, plus some sprigs for garnish
  • mashed potatoes, for serving

  • Preheat the oven to 200°C.
  • In a bowl, mix the olive oil with the parsley, rosemary, garlic, and shallot, and season with salt and pepper. Set aside.
  • Rub the lamb rack with the previous mixture and marinate for 40 minutes.
  • Sear the lamb rack in a hot skillet over high heat on both sides. Once seared, place it on a baking tray and bake for 10 minutes or until the desired doneness. Let it rest for a few minutes before cutting.
  • For the reduction, heat the balsamic vinegar with the sugar substitute, add the garlic and rosemary, and cook until it reduces and has a thick consistency. Let it cool and set aside.
  • Cut the rack into chops, serve on a bed of mashed potatoes, and place the chops on top. Drizzle with the balsamic reduction, garnish with fresh rosemary, and enjoy.
