  • Crush the coriander seeds, cumin, and chili flakes in a molcajete or mortar until you achieve a powder. Add the garlic and crush to form a reddish paste. Set aside.
  • Mix the ground lamb with the drained red bell pepper, paprika, garlic paste, and enough salt and pepper in a bowl; integrate perfectly. Remember that due to the amount of fat in the meat, it will be very manageable. In many parts of Turkey, this preparation is left to rest for a whole night, you can do this if you wish.
  • Take 3 long wooden skewers and attach a bit of the meat mixture with your hands to each one; you will notice how easy it will be to manipulate. Press to adhere the meat and shape it into an elongated form. Repeat until the meat is finished.
  • Cook the kebabs on a hot charcoal grill for 10 minutes, turning regularly. Also, remember that the characteristic of this dish is that it appears dry on the outside but should be very juicy on the inside. Once ready, remove the kebabs from the charcoal.
  • Serve the kebabs accompanied by roasted tomatoes, red onions, and roasted green chilies. Remember to include pita bread and yogurt sauce for serving.
