Lamb with Tomatoes and Greek Style Yogurt

  • 1 cup FAGE® Total 0% greek style yogurt
  • 1 lime, (zest)
  • 2 cloves garlic, crushed
  • 3 tablespoons olive oil
  • 1/4 tablespoons salt, and black pepper
  • 1 teaspoon ground cumin
  • 4 lamb legs
  • 1 onion, thinly sliced
  • 5 1/2 cups dry white wine
  • 1 cube chicken bullion
  • 2 cups tomatillo, chopped
  • 1 tablespoon tomato purée
  • 1 teaspoon sugar
  • 2 leaves bay
  • 2 tablespoons fresh oregano
  • 3/8 cups kalamata olive
  • 3/4 cups artichoke, halved
  • 2 cloves garlic
  • paprika, for sprinkling

  • In a bowl, add 3 tablespoons of FAGE® Total 0% Greek Style Yogurt and stir in the lemon zest, garlic, 1 tablespoon of olive oil, season, and add the cumin.
  • Mix the leg of lamb with the prepared FAGE® Total 0% Greek Style Yogurt and stir well. Let marinate for at least 1 hour.
  • Heat 1 tablespoon of olive oil in a skillet and fry the meat until browned.
  • Remove from the skillet, add the oil, and fry the onion until translucent.
  • Pour in the wine and stir well, then add all remaining ingredients except the olives and artichokes.
  • Cover the pot and simmer for 2 hours until the meat is tender, then add the olives and artichokes and cook for 10 more minutes.
  • In a separate container, mix the garlic into the remaining FAGE® Total 0% Greek Style Yogurt.
  • Serve the lamb with a tablespoon of FAGE® Total 0% Greek Style Yogurt mixed with garlic and paprika.
