Mint Lamb Leg

A delicious leg of lamb marinated in a mint, garlic, and olive oil pesto.

  • 1 lamb leg, (approximately 3 kilos)
  • 1 cup peppermint, fresh chopped 1 cup peppermint, fresh chopped

  • In a food processor, process the mint, olive oil, garlic, lemon juice, and zest.
  • Season the leg with plenty of salt and pepper and cover it with the mint pesto. Place it in a dish and let it marinate for at least 4 hours, or preferably overnight.
  • Preheat the oven to 200 degrees Celsius.
  • Place the leg on a roasting dish with a rack and season with a little more salt. Add one cup of water to the dish.
  • Put the leg in the oven and reduce the temperature to 180 degrees. Bake for 2-3 hours, or until it reaches the desired doneness.
  • Remove from the oven, cover with aluminum foil, and let it rest for 10 minutes before serving.
