In a food processor, process the mint, olive oil, garlic, lemon juice, and zest.
Season the leg with plenty of salt and pepper and cover it with the mint pesto. Place it in a dish and let it marinate for at least 4 hours, or preferably overnight.
Preheat the oven to 200 degrees Celsius.
Place the leg on a roasting dish with a rack and season with a little more salt. Add one cup of water to the dish.
Put the leg in the oven and reduce the temperature to 180 degrees. Bake for 2-3 hours, or until it reaches the desired doneness.
Remove from the oven, cover with aluminum foil, and let it rest for 10 minutes before serving.
