Lettuce Tacos with Pastor Chicken

Prepare this healthy option of pastor chicken tacos without carbohydrates served in French Lettuce Eva®, accompanied by grilled pineapple, cilantro, and red onion. With a bit of the tree chili sauce from the tacos and a few drops of lime, this taco option is ideal for maintaining a healthier diet without limiting your cravings.

  • 50 grams achiote, for marinade
  • 1/4 cups apple cider vinegar, for marinade
  • 3 guajillo chiles, cleaned, deveined, and seedless, hydrated for marinade
  • 2 ancho chiles, cleaned, deveined, and seedless, hydrated for marinade
  • 3 cloves garlic, for marinade
  • 1/4 white onions, for marinade
  • 1/2 cups pineapple juice, for marinade
  • 1 tablespoon coarse salt, for marinade
  • 1 tablespoon allspice berry, for marinade
  • 2 cloves, for marinade
  • 1 tablespoon oregano, for marinade
  • 1 tomato, grilled, for marinade
  • 1 tablespoon cumin, for the marinade
  • 1 chicken breast, boneless and skinless, cut into small cubes
  • 1 tablespoon olive oil, or flaxseed
  • Eva® butterhead lettuce
  • 1/2 pineapples, cut into half moons
  • 1/2 cups fresh cilantro, chopped
  • 1/2 cups red onion, finely chopped
  • árbol chile sauce, for serving

  • For the marinade, blend the achiote, vinegar, chiles, garlic, onion, juice, salt, pepper, cloves, oregano, tomato, and cumin until you obtain a homogeneous mixture.
  • In a bowl, place the chicken and marinate with the pastor marinade for 1 hour in the refrigerator.
  • Heat a skillet over medium heat with the oil and cook the marinated chicken until cooked through. Set aside covered.
  • Heat a grill over high heat, grill the pineapples until golden brown, remove and cut into cubes, set aside.
  • On a board, place French Lettuce Eva® leaves, add the pastor chicken and serve with the grilled pineapple, cilantro, onion, and accompany with a little sauce and limes.
