Light Almond Breaded Chicken

The chicken is breaded in a mixture of almonds, breadcrumbs, and parsley. It tastes delicious and is light since it is baked, not fried.

  • 1 cup whole grain bread crumbs, ground
  • 1/4 cups Parmesan cheese, grated
  • 1/4 cups almonds, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 clove garlic, mashed
  • 1 teaspoon salt
  • 1/4 teaspoons dried thyme
  • 1/4 cups olive oil
  • 4 chicken breasts, thinly

  • Preheat the oven to 200°C.
  • In a bowl, mix the breadcrumbs, cheese, almonds, parsley, garlic, salt, thyme, and a little pepper. Stir well.
  • Pour the oil into another dish.
  • Soak the chicken first in the oil and then coat it with the breadcrumb mixture.
  • Place the chicken on a baking tray lined with paper to prevent sticking.
  • Bake for 25 minutes or until the chicken is cooked.
