Liver with Onions and Serrano Chile

Liver with onions is a homemade dish that is highly recommended, as it provides a significant amount of minerals, vitamins, folic acid, iron, and is high in protein while containing all essential amino acids for the body. This dish includes onion and serrano chile to create a delicious combination.

  • 4 cups milk
  • 1/2 kilos beef liver, in steak
  • 1 onion, in thin slices
  • 2 cloves garlic, finely chopped
  • 1 tablespoon black pepper, ground
  • 3 tablespoons olive oil
  • 2 serrano chiles, cut in half, lengthwise
  • pinches salt
  • Mexican red rice, to accompany
  • beans, whole and cooked, to accompany
  • corn tortillas, to accompany

  • Mix the milk and liver in a bowl, let it rest for 15 minutes.
  • Heat the oil in a skillet, add the onion and serrano chile, and cook for 2 minutes. Remove from the skillet and set aside.
  • Drain the liver and add it to the same skillet where the onion was cooked. Cook for 6 minutes over medium heat along with the garlic and pepper.
  • Return the onions to the skillet and cook for 2 more minutes or until golden brown. Remove from the skillet and set aside.
  • Serve on a large plate and accompany with red rice, beans, and tortillas.
