Longaniza in Green Sauce

1 kilo longaniza, cut into pieces
water
4 potatoes, peeled and diced
1 kilo tomatillo, for the sauce
4 serrano chiles, for the sauce
1/4 onions, for the sauce
1 clove garlic, for the sauce
1 sprig fresh cilantro, for the sauce
2 tablespoons vegetable oil, for the sauce
salt and pepper

In a skillet over medium heat, heat the oil and fry the longaniza until golden. Remove excess fat and set aside.
In a pot of boiling salted water, cook the potatoes until tender. Drain and set aside.
In a pot over medium heat, boil the tomatoes in water with the chiles, onion, garlic, and cilantro for about 20 minutes. Drain.
Blend the vegetables until smooth. Strain if necessary.
In a saucepan, heat the oil over medium heat, pour in the sauce and cook for 10 more minutes, season with salt and pepper.
Incorporate the longaniza and potatoes into the sauce, adjust seasoning, and cook for 5 more minutes over low heat.
Serve hot accompanied by beans and rice.
