Marinade with Dried Chiles

  • 5 guajillo chiles, clean, without tail or seeds.
  • 4 pasilla chiles, clean, without tail or seeds.
  • 1 ancho chile, clean, without tail or seeds.
  • 1 chipotle chile, dry, clean, without tail or seeds.
  • 1 tablespoon cilantro seeds
  • 1 tablespoon allspice berry
  • 1/2 cups olive oil
  • 2 meats, of your choice, in thin cut. It can be T-bone. 500 grams
  • 2 tablespoons coarse salt

  • For the marinade, blend the dried chiles with allspice, coriander seeds, and olive oil until you get a homogeneous mixture; there will be some chunks.
  • On a cutting board, place the meat, cover with the previous mixture, and marinate for 10 minutes.
  • Grill to the desired doneness, season with coarse salt. Serve the meat with the potato salad and guacamole.
