Marinated Meat

  • 1 kilo pork chump
  • 1/2 onions
  • 1/2 heads garlic
  • salt
  • 2 ancho chiles, cleaned and soaked
  • 3 árbol chiles, cleaned and soaked
  • 1/4 cinnamon sticks
  • 1 leaf bay
  • 2 cloves
  • 1/4 cups vinegar
  • 1 cup pork broth
  • corn tortillas, to accompany

  • Cook the pork with onion, garlic, and salt in a pot with water for 1 hour or until tender.
  • Shred the meat and set aside.
  • Blend the ancho chiles, árbol chiles, cinnamon, bay leaves, cloves, and pork broth. Set aside.
  • Sauté the meat with a bit of oil, season, and pour in the marinade. Cook over low heat for 10 minutes, stirring constantly.
  • Serve and enjoy in tacos!
