1/4 kilos ancho chile
2 cloves garlic, peeled
1 sprig fresh thyme
1 sprig marjoram, fresh
1 leaf bay
1 teaspoon black pepper
salt, to taste
3/4 cups red wine vinegar
1/2 cups white wine
16 bone-in pork chops, bone-in, 150 grams each

Drain the chiles and blend them in the blender along with the peeled garlic, herbs, pepper, salt, vinegar, and white wine.
Marinate the pork chops with the semi-thick sauce prepared for 1 hour.
Preheat a skillet for 10 minutes and grill each chop for 5 or 6 minutes on each side.
