  • Preheat the oven to 180°C.
  • In a pot of boiling water, cook the potatoes with salt until they are soft. Drain and set aside.
  • In a bowl, use a masher to mash the potatoes until they have a mashed potato consistency. Add the asadero cheese, butter, cooked bacon, and season with salt and pepper.
  • For the picadillo, in a skillet over medium heat, heat the oil, fry the onion, garlic, and ground meat, and cook until it changes color. Add the tomato and tomato puree, cook for a few minutes, and then add the carrots, peas, and bay leaf.
  • Continue cooking for about 10 minutes or until the meat is fully cooked and the vegetables are tender. Season to taste with salt and pepper and ensure that the liquid is completely absorbed so that you can assemble the pie well.
  • In an oven-safe dish, add a little mashed potato and spread it out. Sprinkle the cheese, cover with the picadillo, add more cheese, and finish with another layer of mash and cheese. Bake for about 10 minutes.
  • Serve with chopped parsley and enjoy.
