Meat Cake with Plantain

  • 1 egg
  • 3 tablespoons butter
  • 1 tablespoon garlic, finely chopped

  • 1/2 cups red onion, finely chopped, for the filling
  • 2 tablespoons fresh cilantro, finely chopped, for the filling
  • 500 grams ground meat, beef, for the filling
  • 1 teaspoon cumin, for the filling
  • 1 teaspoon oregano, for the filling
  • 1 cup tomato purée, for the filling
  • 1/2 cups olives, for the filling

  • 1/2 cups Manchego cheese, for gratin
  • 1/2 cups cheddar cheese, for gratin
  • fresh cilantro, for decorating

  • Preheat the oven to 180°C
  • Cook the plantains in salted water for 10 minutes until soft. Drain.
  • Mash the plantains until you get a puree and mix with the egg, butter, garlic, season with salt and pepper. Set aside.
  • In a skillet over medium heat, heat the oil, sauté the onion, add the cilantro, the meat, cumin, oregano, tomato puree, and olives; season with salt and pepper. Cool.
  • Grease a baking dish with butter, add a layer of the plantain puree, add the meat and cover with the rest of the plantain, add cheese and bake for 15 minutes.
  • Cut a slice, decorate with cilantro, and serve with a fresh salad.
