  • To prepare the potato puree, heat 2 liters of water with a small spoonful of salt and cook the potatoes.
  • When the potatoes are cooked, peel them and make the puree.
  • Then add the Parmesan cheese, butter, a pinch of ground black pepper, and mix well.
  • Now we prepare the vegetables for the meat.
  • Peel the garlic and chop it finely.
  • Peel the onion and carrot.
  • Now grate the onion and carrot with the help of a grater.
  • In a large skillet, heat the oil over high heat.
  • When hot, add the onion, carrot, and garlic.
  • Leave on medium-high heat until the vegetables start to take on some color.
  • Then raise the heat, add the minced meat and half a small spoonful of salt.
  • When it takes color, add the wine and let it reduce (until it almost disappears).
  • Then add the beef broth and the fried tomato.
  • Leave on medium heat uncovered until the broth reduces.
  • The meat should be left with a very thick and creamy sauce (but it should not be watery).
  • When ready, taste for salt and if necessary add a little more.
  • Preheat the oven to 200 degrees Celsius (top and bottom) with the grill on.
  • Place the meat in an oven-safe dish and cover the meat with the potato puree we prepared.
  • Put it in the oven and leave it until the surface of the potato puree turns golden.
