Meatballs in Chipotle Sauce

Meatballs are a classic dish for everyday meals. This recipe for meatballs with tomato sauce and a touch of chipotle is perfect for lunchtime. Serve them with white rice or beans.

  • 400 grams ground beef
  • 1/4 onions, finely chopped
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 egg
  • 1 teaspoon salt
  • 1/4 cups breadcrumbs
  • 3 tablespoons vegetable oil
  • 3 tomatoes, for the sauce
  • 60 grams onion, for the sauce
  • 1 clove garlic, for the sauce
  • 2 tablespoons chipotle chile in adobo sauce, for the sauce
  • 1 cup chicken broth, for the sauce
  • 1 teaspoon salt, for the sauce

  • In a bowl, mix the meat with the onion, cilantro, egg, salt, and breadcrumbs. Form the meatballs.
  • In a skillet over medium heat, heat the oil and sear the meatballs. Set aside.
  • For the sauce, blend all the ingredients except the salt.
  • Fry the sauce in the same skillet as the meatballs and cook over low heat, covered, for 20 minutes or until the meatballs are cooked through. Season with salt.
