Melted Chicken a la Poblana

  • Pam® butter, butter-flavored canola oil spray
  • 500 grams chicken breast, skinless
  • 6 Manchego cheese, in slices
  • 100 grams button mushrooms
  • 3 teaspoons onion, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 3/4 cups corn kernels
  • 100 grams Poblano chile, in strips
  • 1/2 cups low-fat milk
  • 1 1/2 cups sour cream
  • 100 grams spinach
  • salt
  • pepper

  • Spray a skillet with 2 shots of PAM® Butter and sear the chicken breasts on both sides until cooked. Set aside on a tray placing a slice of cheese on top.
  • In the same skillet, spray 2 shots of PAM® Butter and cook the onion, garlic, mushrooms, corn, and poblano pepper strips, add the cream and milk, season with salt and pepper.
