3 kilos beef tripe
1 kilo cow's feet
6 limes
1/2 onions
3 cloves garlic
1 sprig thyme
1 sprig epazote
3 bay leaves
2 tablespoons grain salt
3 tablespoons beef broth
10 guajillo chiles
10 pasilla chiles
4 cloves garlic
1 onion
1 teaspoon cumin
6 allspice berries
4 cloves

Wash the tripe and feet, removing excess fat.
Place the tripe and feet in a pot, cover with water, and squeeze the limes; let it rest for 30 minutes.
Wash the tripe and feet again.
Now place the tripe and feet back in water with a cup of vinegar; let it rest for 30 minutes.
Wash the tripe and feet.
Put the tripe, the feet, the garlic, the onion, and the coarse salt in a pot with water. Cook for an hour and a half over medium heat.
Soak the chiles in a pot with water for 10 minutes.
Blend the chiles, garlic, onion, pepper, cumin, and clove.
Add the sauce to the tripe along with the thyme, epazote, and bay leaf.
Add a bit of the broth to the tripe and let it boil for 20 minutes.
