Mexican Beef Tripe

  • Wash the tripe and feet, removing excess fat.
  • Place the tripe and feet in a pot, cover with water, and squeeze the limes; let it rest for 30 minutes.
  • Wash the tripe and feet again.
  • Now place the tripe and feet back in water with a cup of vinegar; let it rest for 30 minutes.
  • Wash the tripe and feet.
  • Put the tripe, the feet, the garlic, the onion, and the coarse salt in a pot with water. Cook for an hour and a half over medium heat.
  • Soak the chiles in a pot with water for 10 minutes.
  • Blend the chiles, garlic, onion, pepper, cumin, and clove.
  • Add the sauce to the tripe along with the thyme, epazote, and bay leaf.
  • Add a bit of the broth to the tripe and let it boil for 20 minutes.
