  • 8 tomatoes, medium
  • 4 cloves garlic
  • 2 pasilla chiles
  • 1/2 cups olive oil

  • Preheat the oven to 180º C. Inject the turkey several hours beforehand with the white wine.
  • Lightly roast the tomatoes and the seeded chilies. Remove the skin from the tomatoes and blend the two ingredients. Grate the onions and squeeze the garlic.
  • In a pot, heat the olive oil, add the garlic and onions until they are fried.
  • Add the tomato sauce, salt, pepper, and consommé, and let it simmer.
  • Rub the entire turkey on the outside and put it in the oven for 4-5 hours at 180º C.
