Mole Coloradito

Mole coloradito was named for the color of the sauce, albeit in diminutive, as it was necessary to distinguish it from mole colorado, which is totally different. Remember that you can use this Oaxacan mole to prepare enchiladas and tamales. It is worth mentioning that in Oaxaca, its consumption is very popular during the vigil period.

  • 3 chilcostle chiles, without seeds and veins
  • 3 chilhuacle chiles, without seeds and veins
  • 2 guajillo chiles, without seeds and veins
  • 1 ancho chile, without seeds and veins
  • 1 cinnamon stick
  • 1 clove
  • 2 black peppercorns
  • 1 cup almonds, peeled and filleted
  • 1 cup sesame seeds
  • 1/2 cups raisins
  • 1/2 pieces of bread, sliced
  • 1/2 onions, roasted
  • 2 cloves garlic, peeled, roasted
  • 1 plantain, fried
  • 3 cups chicken broth
  • 1 tablespoon lard
  • 1/2 Mexican chocolate tablets

  • 4 chicken drumsticks, cooked
  • 4 chicken thighs, cooked
  • sesame seeds, for decoration
  • corn tortillas, to accompany

  • Toast the chilcostle chile, chilhuacle chile, guajillo chile, and ancho chile in a skillet over medium heat for 2 minutes. Set aside.
  • Use the same skillet to toast the almonds, sesame seeds, bread, and cinnamon. Set aside.
  • Place the chiles in a bowl and hydrate with hot water, let sit for 10 minutes.
  • Place the chiles, sesame seeds, almonds, bread, cinnamon, raisins, plantain, and chicken broth in a blender and blend for 5 minutes or until very well ground, then add the onion and garlic and blend for 2 more minutes. Set aside.
  • Add the lard to a pot and heat over medium heat, then add the mole coloradito and let cook for 15 minutes. Finally, add the chocolate, season with salt and pepper, and cook over low heat for 20 minutes. Add the pieces of chicken and cook for 5 minutes.
  • Serve the traditional mole coloradito on a plate with two pieces of chicken and decorate with sesame seeds.
