Molletes with Sausage

You can't miss this practical and economical recipe for molletes with sausage. Traditionally, molletes are enjoyed during breakfast and are made with buttered toasted bread, refried beans, melted cheese, and are accompanied by pico de gallo. However, there are many versions of this dish and it can be paired with different types of meat or even chilaquiles. You can play with the ingredients to give it a twist and add a different flavor.

  • 4 bolillo rolls
  • 4 tablespoons butter, soft
  • 1 cup refried beans
  • 1 cup Manchego cheese, grated
  • 3 tomatoes, for the pico de gallo
  • 1/4 onions, for the pico de gallo
  • 2 serrano chiles, for the pico de gallo
  • 1 bunch cilantro, for the pico de gallo
  • 6 sausages, for the pico de gallo
  • 2 tablespoons lime juice
  • salt
  • pepper

  • Finely chop the onion, serrano pepper, and cilantro, dice the tomato into small cubes, and slice the sausages. Combine the ingredients with lemon juice, salt, and pepper.
  • Cut the bolillos in half and spread them with butter, brown in the oven at 200 °C for 5 minutes, remove and set aside.
  • Spread refried beans on the bolillos and add manchego cheese, broil for 5 minutes in the oven and remove.
  • Serve the molletes warm along with the pico de gallo sauce with sausages.
