Mummy Chicken

  • 500 grams smoked bacon, in strips
  • 6 tablespoons agave syrup
  • 1 tablespoon ground black pepper
  • 4 tablespoons fresh rosemary, finely chopped
  • 4 tablespoons fresh thyme, finely chopped
  • 1/4 oranges, sliced

  • Prepare your Weber® grill for medium indirect heat (350º - 450ºF or 175º - 232ºC) with a 2-zone fire.
  • In a bowl, mix the thyme and rosemary, set aside. Clean the chicken well and dry it completely with a paper towel. Coat the chicken with the thyme and rosemary mixture, and stuff the chicken with the orange slices.
  • Wrap the chicken with the bacon slices, brush the entire surface with honey, and sprinkle with black pepper. Place the chicken on the Weber® bird grill and add the vegetables around it.
  • Place the chicken on the grill, over medium indirect heat, for 60 to 80 minutes or until the internal temperature reaches 170ºF or 76ºC in the thigh, being careful not to touch the bone.
  • Remove the chicken from the grill and allow it to rest for 15 minutes before slicing. Serve alongside the vegetables.
