Pam® Olive, extra virgin olive oil spray
6 chicken breasts, in fillets
300 grams breadcrumbs
100 grams flour
2 eggs
2 teaspoons parsley, finely chopped
200 milliliters sour cream, low in fat
100 milliliters orange juice
1/4 onions
1 teaspoon garlic, chopped
1/4 cups mustard
salt
pepper

Bread the chicken breasts starting with flour, then the egg, and finishing with breadcrumbs.
Blend the orange juice, cream, onion, garlic, and strain.
Spray a saucepan with 2 shots of PAM® Olive, simmer the sauce for 10 minutes, gradually incorporate the mustard, and season with salt and pepper.
Spray a baking sheet with PAM® Olive, place the breaded chicken breasts, and spray each one with 1 shot on each side. Bake for 15 minutes at 180°C.
