Mustard Breaded Chicken Breasts

  • Pam® Olive, extra virgin olive oil spray
  • 6 chicken breasts, in fillets
  • 300 grams breadcrumbs
  • 100 grams flour
  • 2 eggs
  • 2 teaspoons parsley, finely chopped
  • 200 milliliters sour cream, low in fat
  • 100 milliliters orange juice
  • 1/4 onions
  • 1 teaspoon garlic, chopped
  • 1/4 cups mustard
  • salt
  • pepper

  • Bread the chicken breasts starting with flour, then the egg, and finishing with breadcrumbs.
  • Blend the orange juice, cream, onion, garlic, and strain.
  • Spray a saucepan with 2 shots of PAM® Olive, simmer the sauce for 10 minutes, gradually incorporate the mustard, and season with salt and pepper.
  • Spray a baking sheet with PAM® Olive, place the breaded chicken breasts, and spray each one with 1 shot on each side. Bake for 15 minutes at 180°C.
