  • 1/2 cups onion, sliced
  • 1 tablespoon garlic, finely chopped
  • 3 cups nopal, cut into strips
  • 1 tablespoon oregano
  • 3 tablespoons white vinegar
  • 1 pinch salt
  • 1 tablespoon pepper
  • 4 cecina, enchilada
  • 4 cecina, natural
  • 4 tablespoons sour cream, or ranch-style
  • 1 avocado, cut into wedges
  • fresh cilantro, for serving

  • Heat a skillet over medium heat with a teaspoon of oil, cook the onion and garlic until translucent. Add the nopales and cook for about 5 minutes or until they no longer release slime. Add vinegar, salt, and pepper, let it reduce, and remove. Chill.
  • On a cutting board, lay out the dried beef and fill it with the nopales. Roll it up and secure with a toothpick if necessary.
  • Heat a skillet over high heat and cook the rolls with the remaining oil until well cooked. Serve with cream, avocado, and cilantro. Enjoy.
