Ingredients: 2 tablespoons vegetable oil; 1/2 cups onion, sliced; 1 tablespoon garlic, finely chopped; 3 cups nopal, cut into strips; 1 tablespoon oregano; 3 tablespoons white vinegar; 1 pinch salt; 1 tablespoon pepper; 4 cecina, enchilada; 4 cecina, natural; 4 tablespoons sour cream, or ranch-style; 1 avocado, cut into wedges; fresh cilantro, for serving

Heat a skillet over medium heat with a teaspoon of oil, cook the onion and garlic until translucent. Add the nopales and cook for about 5 minutes or until they no longer release slime. Add vinegar, salt, and pepper, let it reduce, and remove. Chill. On a cutting board, lay out the dried beef and fill it with the nopales. Roll it up and secure with a toothpick if necessary.
