Northern Burrito

  • 500 grams skirt steak, in tampiqueñas
  • salt

  • 1/4 red onions
  • 2 tomatoes
  • 1/4 cups árbol chile
  • 1 clove garlic
  • salt

  • 1 cup refried beans
  • 1 cup guacamole
  • 1 cup asadero cheese
  • 3 tortillas, burrera

  • On a cutting board, season the meat with salt and pepper.
  • On a grill or barbecue, place the meat over high heat and cook for 5 minutes on each side or until you reach your desired doneness.
  • For the sauce, cook the onion, garlic, tomato, and árbol chili in a small pot with water. Cook for 10 minutes.
  • Blend the tomato, onion, garlic, and chilies with a little of their cooking water. Season with salt and pepper and blend for 5 minutes.
  • To assemble the burrito, add the meat, then the guacamole, beans, and cheese on top. Wrap the burrito by folding in the edges and then rolling it up.
  • Heat on a grill for 3 minutes just to melt the cheese. Serve on a flat plate and accompany with the sauce.
