Oven-Fried Chicken

This oven-fried chicken recipe is first dipped in a mixture of mustard and mayonnaise and then coated with cereal and breadcrumbs. It turns out delicious and is prepared entirely in the oven.

  • 1 1/3 cups cornflakes cereal
  • 2 1/4 cups toast, savory cookies
  • 1 tablespoon vegetable oil
  • 2 teaspoons kosher salt
  • 1/2 teaspoons cayenne pepper
  • 1/2 teaspoons paprika
  • 1/2 teaspoons black pepper
  • 1/2 cups low-fat mayonnaise
  • 1 teaspoon Dijon mustard
  • 6 chicken, thighs or legs

  • Preheat the oven to 200 degrees (400 F). Place a rack over a baking sheet lined with aluminum foil. Spray the rack with PAM spray.
  • In a food processor, grind the cereal and the crackers or toasted bread. Put all the ground mixture in a plastic bag and add the oil, salt, cayenne pepper, paprika, and pepper. Mix everything well.
  • Whisk the mayonnaise and Dijon mustard in a deep plate.
  • Dip the chicken pieces in the prepared mayonnaise and coat well. Then place the chicken piece in the plastic bag and coat well with the cereal. Place on the prepared rack and repeat with the remaining chicken.
  • Spray PAM over all the chicken and place it in the oven. Cook for 35-40 minutes until cooked through.
  • Transfer to a platter and serve hot or at room temperature.
