Panuchos

  • 1 kilo masa dough
  • 1 onion, slice
  • 3 cups black beans, cooked
  • 2 sprigs epazote, or to taste
  • salt
  • corn oil, for frying
  • 1 kilo pork loin, cooked and shredded
  • 3 tomatoes, medium peeled and chopped
  • 2 avocados, peeled and chopped
  • 1 butterhead lettuce, finely chopped
  • pickled Jalapeño chiles, in strips

  • Make small tortillas with the dough and cook on a griddle. Cook on both sides but be careful not to break them when flipping.
  • For the cochinita pibil, place the meat in the pressure cooker. While it cooks, blend the ingredients except for the onion and pour into the pressure cooker. Cover the pot and cook for 30 min.
  • Shred the meat and mix with the sauce. Without covering the pot, let it boil for a few more minutes.
  • Make an opening in the warm tortillas and fill with refried and mashed beans. Close and fry in hot oil; after frying, drain with paper towels.
  • Serve with lettuce, cheese, and salsa.
