Parmesan Chicken with Tomato

  • 2 tablespoons butter
  • 1/4 onions, finely chopped
  • 2 cups button mushrooms, sliced
  • 2 chicken breasts, cut in half
  • 2 1/2 cups whipping cream
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 1 cup sun-dried tomatoes
  • 1/2 cups Parmesan cheese
  • 2 tablespoons basil, chopped and sprigs for garnish

  • In a skillet over medium heat, cook the onion with butter until it is translucent. Add the mushrooms and cook for about 5 minutes.
  • Add the chicken breasts and whipping cream, reduce the heat and cook covered for about 25 minutes or until the chicken is cooked through. Stir occasionally.
  • Uncover and season, add the sun-dried tomato, cheese, and basil. Cook for 5 more minutes to combine and serve.
