Pepper Steak

Pepper steak is a very rich French recipe. The sauce is made with pepper, butter, and cognac.

  • 4 beef tenderloins, (1.2 inches wide)
  • 1 tablespoon coarse salt
  • 3 tablespoons black peppercorn
  • 1 tablespoon vegetable oil
  • 1/3 cups shallot, chopped
  • 1/2 sticks unsalted butter
  • 1/2 cups cognac
  • 3/4 cups sour cream

  • Preheat the oven to 100 degrees Celsius.
  • In a bag, crush the pepper to break it and coat the 4 steaks in it, adding salt to taste. (the steaks will be covered in pepper).
  • Heat a large skillet and add the vegetable oil. Sear the steaks for approximately 3 minutes on each side.
  • Place the steaks on a baking tray and keep warm in the oven while cooking the sauce.
  • In the skillet where you cooked the steaks, add the shallots and butter. Cook for 3-5 minutes or until the shallots are golden.
  • Add the cognac and let the sauce boil and reduce to a glaze (approx. 3 minutes).
  • Add the cream and cook for 2-3 more minutes. Remove the steaks from the oven.
