Place the pig's feet in a pressure cooker along with the salt, onion, and herbs, and let them cook for about 35 minutes. Once you start hearing the cooker, (this time depends on the city you live in, as in the north of the country, they cook them for 1 hour).
In a separate pan, sauté the onion in oil, along with the carrot and chilies, and let them cook until the carrot is slightly soft, then remove and place everything in a container with the vinegar. Let it rest to allow the flavors to blend well.
Once the pig's feet are ready (they should be very tender), place them in the vinaigrette preparation along with the herbs and let them soak for about 20 minutes, then remove any excess vinaigrette if there is any left.
