Al Pastor Pizza

  • 1 teaspoon salt, for the dough
  • 1 teaspoon oregano, for the dough

  • 3 guajillo chiles, soaked and seedless, for the meat
  • 2 cloves garlic, for the meat
  • 1/2 packages achiote, for the meat
  • 1 cup orange juice, for the meat
  • 1/4 cups white vinegar, for the meat
  • 1 teaspoon cumin, whole for the meat
  • 1 teaspoon oregano, whole for the meat
  • 3 allspice berries, for the meat
  • 3/4 kilos pork
  • 2 tablespoons vegetable oil, for the meat

  • 2 cups Manchego cheese, for the pizza
  • 1 cup canned pineapple, cut into cubes
  • 1/2 cups white onion, sliced

  • For the dough, in a mixer add flour, baking powder, salt, oregano, water and mix for 5 minutes, or until you have a homogeneous dough. Set aside.
  • Blend the guajillo chili, garlic, achiote, orange juice, white vinegar, cumin, oregano, and black pepper. Pour over the meat and marinate for 1 hour.
  • In a skillet over medium heat, heat the oil and fry the meat; if necessary, season with salt and pepper. Let cool and set aside.
  • On a floured surface, roll out the pizza dough to a thickness of 3 mm and cut it to the size of your pizza base.
  • Add cheese to the base of the pizza, al pastor meat, pineapple, and onion, bake for 15 minutes at 200 °C.
  • Garnish with cilantro, serve with sauce and limes, serve hot.
