Almond Pork

Try this almond pork recipe, as it's perfect for celebrating with family and friends. Additionally, this dish is full of flavor with the combination of Fresh Gourmet® almonds and pumpkin seeds and plum. The crunchy consistency of Fresh Gourmet® Glazed Almond Cranberries on the loin will give it the perfect touch.

  • 2 kilos pork tenderloin
  • 2 tablespoons vegetable oil
  • salt

  • 1 cup Fresh Gourmet® almonds and pumpkin seeds
  • 2 cloves garlic
  • 1 cup onion, in quarters
  • 1/4 cups árbol chile, powder
  • 1 cup plum, boneless
  • 2 1/2 cups chicken broth
  • salt

  • 1 cup Blueberries with Fresh Gourmet® Glazed Almonds, 99 g
  • new potatoes, with rosemary, for serving

Low
  • Heat olive oil in a skillet over high heat and cook the fillet for 10 minutes or until golden brown on the outside. Remove from the skillet and set aside.
  • Add oil to the same skillet, then add the Fresh Gourmet® almonds and pumpkin seeds, garlic, onion, árbol chili, plum, and broth. Cook over medium-low heat for 10 minutes and remove from heat.
  • Blend the almond with the garlic, onion, chili, plum, and chicken broth for 5 minutes, season with salt and pepper. Mix until you have a smooth sauce.
  • Place the fillet in an oven-safe dish and pour the blended sauce over it. Bake at 180 °C for 40 minutes, covered with aluminum foil.
  • Serve the sliced almond pork with a bit of the cooking sauce and sprinkle with Fresh Gourmet® Glazed Almond Cranberries. Accompany with rosemary baby potatoes.
