BBQ Pork Trompo

  • 1/2 cups butter, in medium cubes
  • 1/4 cups garlic, finely chopped
  • 2 cups ketchup
  • 1/2 cups mustard
  • 1 cup brown sugar
  • 1/4 cups Worcestershire sauce
  • 2 tablespoons thyme
  • 1/4 cups apple cider vinegar
  • 1 tablespoon árbol chile, in powder
  • 1 cup bourbon
  • salt
  • pepper
  • 2.1 kilos PROAN® Cowboy Pork Chops
  • 4 potatoes, in halves
  • bread for sliders
  • coleslaw
  • American cheese

  • Heat the butter in a pot over medium heat. Then, add the garlic and cook for 2 minutes. Incorporate the ketchup, mustard, brown sugar, Worcestershire sauce, thyme, vinegar, and árbol chili and cook for 10 minutes over medium heat.When the BBQ sauce thickens a bit, pour in the bourbon and cook for 5 more minutes. Season with salt and pepper and set aside.
  • Remove the bone from the Proan® cowboy chops, place in a bowl, and drizzle with half of the sauce.
  • Place 4 halves of potato, then insert 4 large skewers and add the chops, one on top of the other to form the trompo.Finish with 4 slices of potato to hold the top of the trompo.
  • Bake the BBQ pork for 3 hours, constantly basting with the sauce.
  • Cut the trompo and fill the sliders with the meat, yellow cheese, and coleslaw.
