Chicharrón Ceviche

  • 1 Pork belly Proan®, in pieces, for cooking the meat
  • 1/2 onions, for cooking the meat
  • 2 cloves garlic, for cooking the meat
  • 2 bay, for cooking the meat
  • salt, for cooking the meat
  • pepper, for cooking the meat
  • 1/2 cups vegetable oil
  • 2 tablespoons paprika
  • 1/2 tablespoons garlic powder
  • salt

  • 1/2 cups red onion, in strips
  • 1/2 cups green bell pepper, in strips
  • 12 cups tomato, in strips
  • 1/3 cups lime juice
  • 1/4 cups white vinegar
  • 3 tablespoons cilantro, finely chopped
  • cilantro leaves, for garnish
  • guacamole, for serving

  • Heat the water in a pot over medium heat and add the Pork Belly Proan®, onion, garlic, bay leaf, salt, and pepper. Cook for 20 minutes or until it changes color. Drain and reserve.
  • Place the Pork Belly Proan® in a bowl and add the oil, paprika, garlic powder, pepper, and salt. Transfer the meat to a baking tray lined with parchment paper and bake at 200 °C for 30 minutes or until golden and crispy.
  • In another bowl, mix the red onion, green pepper, tomato, lime juice, white vinegar, cilantro, salt, and pepper. Let it rest for 10 minutes.
  • Cut the Pork Belly Proan® into medium cubes and mix with the previous onion mixture. Remember to reserve some of the onion mixture for garnish.
  • Serve, garnish with the red onion mixture and cilantro leaves, and accompany with guacamole.
